Wholesome Seed-Packed Soda Bread: A Gut Friendly


Indulge in the goodness of this Delicious Simple Healthy Soda Bread, made with wholemeal flour and kefir to promote gut health. Elevate the nutritional profile by adding a generous mix of pumpkin, chia, and sunflower seeds for those essential good fats.



Ingredients


• 500g wholemeal flour • 400g kefir

• 1 tsp salt

• 1 tsp bicarbonate of soda

• 100g mixed seeds


Method


1. Preheat the oven to 200C / 180 fan.


2. Sift the wholemeal flour into a large bowl, add the salt and bicarbonate of soda. Mix in the seeds.


3. Create a well in the centre and pour in the kefir. Use your hands to form a dough, adjusting with a little water if needed. The dough should not too sticky.


4. Transfer the dough to a floured surface, kneading for a few minutes. Form it into a ball and slightly flatten. Use a large knife to score the top with a cross, then sprinkle with flour.


5. Place the dough on a baking tray lined with greaseproof paper. Bake in the oven for 25 minutes or until cooked (tap the bottom, and it should sound hollow).


6. Allow the bread to cool on a rack before slicing.


For a gluten free version swap the wholemeal flour for half buckwheat and half quinoa flour
