Tortilla Wrap with Black Bean Sauce


Serves 4 Preparation time 15 minutes Cooking time 15 minutes


2 tins of black beans 1 onion 2 tbsp tomato puree 1 tsp ground cumin (H) 1 tsp ground coriander (H) 1 garlic cloves crushed 1 tbsp olive oil (H) 3 tbsp chopped coriander 8 tortilla breads 100g grated cheese 150ml sour cream 2 avocado 1 jar tomato salsa 1 lemon 1 lettuce 1 red pepper Salt (H) Pepper (H)


Method

1. If you have no microwave then preheat the oven to 200C 2. Finely chop the onions and sweat for 3 minutes until soft, add the crushed garlic, tomato puree, ground cumin and ground coriander, stir for one minute then add the black beans, 100ml of water, a good pinch of salt and pepper and simmer for 10 minutes stirring occasionally until all the water has reduced. Stir in the fresh coriander. 3. While the beans are cooking, slice the peppers into thin slices and chop up the lettuce leaves, set aside. Mash the avocado with the juice of the lemon, season with salt and pepper. 4. Heat the tortilla either in the oven or microwave for 30 seconds. 5. Lay the tortilla on a plate, add a handful of the lettuce with the black bean sauce, a few strips of red pepper, a spoonful of avocado and serve with some grated cheese, sour cream and salsa.

You may find that one tortilla is enough for small children. Or use less filling if having two.
